1 pkg tortillas
1 can of salsa
1 green bell pepper chopped in small pieces
1 onion chopped
1 cup of uncooked beans
1 tomato chopped
cumin, salt, something spicy
grated cheese
Cook the beans in a pressure cooker until done. Cook the veggies until almost done. Add the veggies to the beans. Add your spices to taste. Cover the bottom of a glass baking dish with salsa. On another surface start your enchiladas. Take a tortilla, add the beans, veggies and cheese and a little salsa. Roll up into a burrito, place in the baking dish. Once all the enchiladas are in the dish, cover with salsa and sprinkle cheese. Bake in the oven for 30 to 45 mins at 350 degrees. Freeze leftovers.
